Ingredients 

Main Ingredients

  • 2 tablespoon Red Curry Paste
  • 400 ml Coconut Milk
  • 500 g Chicken Breast sliced
  • 1 cup Mixed Vegetables chopped
  • 2 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 handful Thai Basil fresh

Instructions 

  1. Heat a large pot over medium heat. Add the red curry paste and stir for 1-2 minutes.
  2. Add the coconut milk and bring to a simmer.
  3. Add the sliced chicken breast and cook until no longer pink.
  4. Add the mixed vegetables and cook until tender.
  5. Stir in the fish sauce and brown sugar. Simmer for another 5 minutes.
  6. Remove from heat and stir in the fresh Thai basil. Serve hot with rice.
