Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon red curry paste
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 cup diced tomatoes
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup fresh basil leaves

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and ginger, cooking for another minute.
  4. 4. Add the red curry paste and cook for another 2 minutes.
  5. 5. Pour in the coconut milk, vegetable broth, and diced tomatoes. Bring to a simmer.
  6. 6. Add the mixed vegetables and cook until tender, about 10-15 minutes.
  7. 7. Stir in the soy sauce and lime juice. Adjust seasoning as needed.
  8. 8. Remove from heat and stir in fresh basil leaves before serving.
