Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Coconut Milk
  • 2 tablespoon Green Curry Paste
  • 1 cup Vegetable Broth
  • 1 cup Mixed Vegetables (e.g., bell peppers, zucchini, carrots)
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 cup Tofu (cubed)
  • 1 handful Fresh Basil

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and vegetable broth, stirring to combine.
  4. Add the mixed vegetables and tofu, and bring to a simmer.
  5. Stir in the soy sauce and sugar, and cook for 15-20 minutes until the vegetables are tender.
  6. Remove from heat and stir in the fresh basil before serving.
