Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 cup Vegetables (carrots, bell peppers, broccoli) chopped
  • 2 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic minced
  • 1 teaspoon Ginger minced
  • 1 tablespoon Peanut butter
  • 1 tablespoon Maple syrup
  • 1 handful Fresh cilantro chopped
  • 1 handful Crushed peanuts

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a pan, heat the olive oil over medium heat. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. 3. Add the red curry paste and cook for another minute.
  4. 4. Pour in the coconut milk and bring to a simmer.
  5. 5. Add the vegetables and cook until tender, about 5 minutes.
  6. 6. Stir in the soy sauce, lime juice, peanut butter, and maple syrup. Mix well.
  7. 7. Add the cooked noodles to the pan and toss to coat evenly with the sauce.
  8. 8. Serve hot, garnished with fresh cilantro and crushed peanuts.
