- 1 lb chicken thighs boneless, skinless
- ½ cup sugar
- ¼ cup fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 3 cloves garlic minced
- 1 unit shallot finely chopped
- 1 unit red chili sliced
- ½ cup water
- 2 unit green onions chopped
- 1 unit lime cut into wedges
1. In a large skillet, heat the vegetable oil over medium heat.
2. Add the sugar and cook, stirring constantly, until it melts and turns a deep amber color.
3. Add the chicken thighs and cook until browned on all sides.
4. Stir in the garlic, shallot, and red chili, cooking for another 2-3 minutes.
5. Add the fish sauce, soy sauce, and water. Bring to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 15-20 minutes.
6. Garnish with green onions and serve with lime wedges.
