  • 400 ml Coconut Milk
  • 500 g Chicken Breast cut into bite-sized pieces
  • 1 cup Vegetables e.g., bell peppers, carrots, potatoes
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1 cup Water

Instructions 

  1. 1. Heat the large pot over medium heat.
  2. 2. Add the yellow curry paste and stir for 1-2 minutes until fragrant.
  3. 3. Pour in the coconut milk and bring to a simmer.
  4. 4. Add the chicken and cook until no longer pink.
  5. 5. Add the vegetables, fish sauce, sugar, and water. Simmer until vegetables are tender.
  6. 6. Serve hot with rice.
