Ingredients 

Main Ingredients

  • 2 cups Cooked Jasmine Rice
  • 1 cup Shredded Coconut toasted
  • 1 cup Ground Pork
  • 2 tablespoon Red Curry Paste
  • 1 cup Peanuts crushed
  • 1 cup Fresh Herbs mint, cilantro, and green onions
  • 2 tablespoon Fish Sauce
  • 2 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Sugar

Instructions 

  1. 1. In a frying pan, cook the ground pork until fully cooked. Set aside.
  2. 2. In a large mixing bowl, combine the cooked rice, toasted coconut, red curry paste, and cooked pork. Mix well.
  3. 3. Form the mixture into small balls and fry them in hot oil until crispy and golden brown. Drain on paper towels.
  4. 4. In a separate bowl, mix the fish sauce, lime juice, and sugar until the sugar is dissolved.
  5. 5. Break the crispy rice balls into bite-sized pieces and toss with the dressing, crushed peanuts, and fresh herbs.
  6. 6. Serve immediately and enjoy!
