Vegan Spicy Thai Peanut Ramen

Main Ingredients
- 8 cups Vegetable broth
- 1 cup Coconut milk
- ½ cup Peanut butter
- 2 tablespoon Soy sauce
- 1 tablespoon Sriracha or to taste
- 1 Lime, juiced
- 4 packs Ramen noodles discard seasoning packets
- 1 cup Shredded carrots
- 1 cup Bean sprouts
- ¼ cup Chopped cilantro
- 2 Green onions, sliced
- 1 Red chili, sliced optional, for garnish
- ¼ cup Chopped peanuts for garnish
1. In a large pot, bring the vegetable broth to a boil.
2. Add the coconut milk, peanut butter, soy sauce, sriracha, and lime juice. Whisk until smooth.
3. Add the ramen noodles and cook according to package instructions.
4. Stir in the shredded carrots and bean sprouts. Cook for another 2-3 minutes.
5. Serve hot, topped with cilantro, green onions, red chili, and chopped peanuts.
